BBQ Bread Salad

After a collaborative, Pimm's fueled, brain storm session with my favorite food lensman and stylist this BBQ Bread Salad was born. I'm a fan of grilling pizza dough, pita bread, naan and of course – freshly broiled bread! If you lot haven't done it before, it BEGS to be washed immediately. BBQ Bread Salad
For the Bread Salad
- 1 baguette
- ane/ii cup olive oil
- 2 cloves garlic
- i cup frozen corn thawed
- 1 agglomeration light-green onions finely chopped
- i/4 scarlet onion finely sliced
- 1/4 cup cotija cheese crumbled
For the BBQ Vinaigrette
- 2 cloves garlic minced
- 3 tablespoons BBQ sauce
- two tablespoons red wine vinegar
- ii tablespoons olive oil
For the Bread Salad

Slice the baguette into one/2 inch pieces. Drizzle olive oil on both sides.

Estrus a BBQ or grill pan over medium high heat. Grill the bread for a few minutes on each side until grill marks appear. Remove the bread from the grill and permit cool. Rub each side of the bread with the garlic cloves to infuse the bread with extra flavor. Slice the cooled breadstuff into 1 inch pieces and gear up bated.

Toss the cubed staff of life, thawed corn, dark-green onions, scarlet onion and cotija cheese in a large bowl. Drizzle with the BBQ Vinaigrette and toss to combine. Serve immediately.
